Gruppomimo Lands in Madrid with Its First Italian Restaurant in Spain

Gruppomimo, a restaurant group founded in France and specializing in contemporary Italian cuisine, arrives in Spain with the opening of its first restaurant in Madrid. The company, ranked No. 32 on the international World’s 50 Best Pizzerias list, is driving its international expansion and positioning Spain as a strategic market for its growth.

Located at Manuel Becerra Square, 17, in the heart of Madrid’s Salamanca district, the venue spans 500 m² (about 5,380 sq ft) and can seat more than 200 guests, distributed between a spacious interior dining room and a Parisian-inspired terrace. The interior design blends elegant, cutting-edge aesthetics with nods to Madrid’s culture, fitting into one of the capital’s most emblematic and exclusive locales.

A Culinary Offering Rooted in Italy

The dining concept brings some of Gruppomimo’s most iconic dishes to Madrid. Among them are Neapolitan pizza, handmade in artisanal fashion following Italian tradition, and Pasta alla Valentina—a truffle-forward recipe prepared to order and crowned with cheese. The menu is completed with a carefully curated selection of antipasti, pastas, and other Italian specialties designed for sharing.

At the helm of the pizza program is Giuseppe Grasso, a Neapolitan master pizzaiolo with almost two decades of experience and a track record at some of the most renowned pizzerias in Italy, the United Kingdom, the United States, and Spain. The kitchen is led by Luis Marval as executive chef, bringing extensive experience in international cuisine and a cosmopolitan view of gastronomy.

One of the establishment’s distinctive features is its custom-made oven, designed specifically to guarantee the highest quality in pizza making. In addition, all doughs are handcrafted in-house by the restaurant team, following traditional Italian cooking processes.

Madrid and Brussels, Starting Points for Growth Across Europe

Edouard Hausseguy, cofounder of Gruppomimo, says that “Spain was one of the key countries within our expansion strategy, and Madrid seemed like the perfect city to begin this new chapter. It’s a city with a rich culinary culture and a way of enjoying dining that aligns closely with our philosophy.”

In addition to its Madrid debut, the company has expanded its international footprint with the opening of a new restaurant in Brussels. With these additions, it reaches 15 restaurants and continues moving forward with its expansion plan.

Founded in France, Gruppomimo opened its first restaurant in Boulogne-Billancourt in 2021. Since then, it has developed a concept that blends Italian gastronomy, premium ingredients, artisanal craft, and a carefully curated hospitality experience.
